Mussels 2 Ways

Makes 2 Servings - From TERRA @ Home Episode 17

Ingredients for Spicy Tomato Sauce

3 tbsp oil

3 cloves garlic, minced

½ white onion, small dice

½ cup dry white wine

1 small can chopped tomatoes

1 tsp tobacco sauce (if you are up for the extra heat!)

3 tbsp hot peppers (Aurora brand are my favourite)

1/3 cup chicken or vegetable stock

1 tbsp Fresh parsley, chopped

1 ½ - 2 lbs mussels, cleaned, and debearded (discard the ones that will not close and the cracked ones)

1 tsp Fresh oregano, chopped

Salt and pepper to taste

 

Ingredients for White Wine Sauce

1 tbsp oil

2 tbsp butter, plus an additional 2 tbsp

3 garlic cloves, minced

2 shallots, minced

1 leek, white and light green part only, julienne

2 ribs celery, thinly sliced

6 sprigs thyme

2/3 cup dry white wine

¼ cup chicken or vegetable stock

Salt and pepper to taste

 

 

 


Instructions for Spicy Tomato Sauce

In a large saucepan, or wok style frying pan, heat oil over medium/high heat. Sautee the garlic and onion until soft and onion is translucent, about 2-3 minutes. Deglaze the pan with white wine. Let the alcohol cook off, about 30 seconds. Add the chopped tomatoes, tobacco sauce, hot peppers, and stock. Turn the heat to medium/low, and simmer for about 5 minutes. Add the mussels, and simmer until they are all opened, about 10 minutes, stirring occasionally. Add the chopped herbs and mix well. Season with salt and pepper. Discard any mussels that do not open. Serve with fresh bread.

 

 

 

 

 

 

 

 

Instructions for White Wine Sauce

In a large saucepan, or wok style frying pan, heat oil over medium/high heat. Sautee the garlic and onion until soft and onion is translucent, about 1-2 minutes. Add the leek and celery and sautee another 2 minutes. Add the thyme sprigs. Deglaze the pan with white wine. Let the alcohol cook off, about 30 seconds. Add the stock, and bring to a boil. Turn the heat to medium/low, and simmer for about 5 minutes. Slowly whisk in the remaining 2 tbsp butter, to thicken up the sauce. (Add more butter if needed.) Season with salt and pepper. Add the mussels, and simmer until they are all opened, about 10 minutes, stirring occasionally. Discard any mussels that do not open. Serve with fresh bread.
