Baked White Fish with Mango Salsa & Bok Choy

Makes 4 servings

Ingredients for Marinade

4 filets tilapia

1 ripe mango, small dice

1 bunch green onion, ½ as is, ½ sliced thin, on a bias

4 tbsp red onion, small dice

1 tsp chopped ginger

few stems of cilantro, chopped

1 tbsp rice wine vinegar

2 tp soy sauce

bok choy, washed well, 2 or 3 times

4 tbsp butter

Salt and pepper, to taste

 

 


Instructions for Kaboba

Place the whole green onion on a baking sheet lined with parchment paper. Place the fish filets on top of the green onion. Season with salt and pepper.

Bake in the oven at 350 degrees for about 10 minutes, or until it flakes easily with a fork when tested.

Meanwhile, make the salsa. Combine the chopped mango, green onion, red onion, ginger, cilantro, and rice wine vinegar. Mix well to combine.

For the Bok Choy, heat butter in a large pan over medium high heat. Add in the prepared Bok Choy. Sauté about 5 minutes until tender. Season with salt and pepper.

Arrange the Bok Choy on the plate with the fish n top. Top the fish with mango salsa.
